Mission of the organization Our mission is to assist those with Celiac Disease (CD) and Dermatitis Herpetiformis (DH) to adjust to a gluten-free lifestyle and to promote awareness of these conditions to physicians, dieticians and the public. We provide current medically accurate information and education and support to those with CD and DH. These are chronic inherited diseases and lead to malnutrition, cancer, and other autoimmune diseases. If left undiagnosed and untreated celiac disease can lead to death. Health is restored by adhering to the gluten-free diet. Gluten, a protein found in wheat, barley and rye, damages the small intestine rather than being absorbed. Intolerance to gluten is the result of an immune-mediated response to the ingestion of gluten causing inflammation in various body systems. This disease is frequently difficult to diagnose with the average diagnosis taking several years. CD is also referred to as gluten intolerance or celiac sprue. It is considered to be the most under-diagnosed common disease today, affecting 1 in 133 people in the USA though approximately 95 percent remain undiagnosed. At our meetings and through our egroup, we share GF recipes, provide cooking tips for using GF flours, and provide information on where to shop for GF products. You will make new friends within the celiac community who will guide you through this lifestyle change. We feel better on the GF free diet and have regained our health. You will too!
